When Live Maine Lobsters Arrive

Your live lobsters will arrive in a reusable, insulated box, covered with wet newspaper soaked in ocean water to keep them damp and packed with frozen gel packs to keep them cold. Live lobsters are blue-green -- they turn bright red only after they're cooked.

Refrigerate your lobsters immediately, and keep them cold until you're ready to cook them. You can refrigerate the entire box, or you can remove the lobsters from the box and put them in a strong paper bag. Do not put live lobsters in fresh or salt water, and do not freeze them.

For best results, live lobsters should be cooked as soon as possible -- preferably on the day they're delivered. But if refrigerated, they'll keep for another 24 hours. Note that cold temperatures make lobsters sluggish.
